LE chef : Javier Oliva

Javier Oliva est un globe-trotteur passionné. Né en Argentine, il étudie la cuisine à l’Institut Gastronomique d’Argentine. Très vite, il commence à parcourir le monde entier, dévoré par l’envie d’apprendre. Il se forme dans les cuisines de palaces, à Buenos Aires et en Europe. Décidé à conquérir Paris, il travaille un temps aux Jardins de l’Espadon du Ritz, avant d’intégrer le restaurant Maguey où il propose une cuisine riches en associations de saveurs innovantes.
